What happens when you sin on Keto?

We had a late summer garden party invitation to our friends, which we happily went to because we knew we will have a great time with good friends, good food and great hosts. 

Welcome drink Pálinka (Hungarian brandy) with delicious, crispy cheese Pogácsa (scone, patty, cake or cheese biscuits).  Who could resist that ?!  Nobody, because it is a Hungarian tradition that needs to be nurtured even more abroad ! 😉

Pálinka - the Hungarian Brandy

Pálinka is an indispensable accessory of any Hungarian social or community events. We  traditionally start most events with a toast and the toast naturally has to be a shot of Palinka. 

Pálinka is a traditional fruit brandy in Central Europe with origins in Hungary, known under several names, and invented in the Middle Ages. Protected as a geographical indication of the European Union, only fruit spirits mashed, distilled, matured and bottled in Hungary, and similar apricot spirits from four provinces of Austria can be called “pálinka”. Törkölypálinka, a different product in the legal sense, is a similarly protected pressed grapes pomace brandy that is commonly included with pálinka. Pálinka may be made of any locally grown fruit, the most common ones are plums, apricots, apples, pears, and sour cherries.  Similar products exist in the Czech Republic, Poland, and Slovakia known as Pálenka as well as in Romania under the name Pălincă.

Pogácsa - Cheese Pastry

We Hungarians are the luckiest folks out there. Not only that we have “Welcome Drinks – Palinka, but also we got “Welcome Biscuits” – Pogacsa to offer our guests.  And here it is … 

Pogácsa (Hungarian), pogača (Croatian and Bosnian), poğaça (Turkish), pogace (Romanian), (Greek: μπουγάτσα ‘bughátsa’, Macedonian, Serbian and Bulgarian: погача, Albanian: pogaçe) is a type of bread baked in the ashes of the fireplace, and later on in the oven, similar to focaccia, with which it shares the name (via Byzantine Greek: πογάτσα), found in the cuisines of the Carpathian Basin, the Balkans, and Turkey.

It is generally made from wheat flour. It can be stuffed with potatoes, ground beef, or cheese, and have grains and herbs like sesame, black nigella seed, or dried dill in the dough or sprinkled on top.
Almost every little village makes its own version, or makes more than one version with different pastry, and so they come in all different textures and flavors. Some Pogácsa are only one inch around and one inch high; others are much larger. Some have a crumbly scone-like consistency inside, while others are more tender like a fresh dinner roll or croissant. Pogácsa is sometimes served hot as an appetizer and/or bread.

Many different ingredients can be used either in the dough, sprinkled on top before baking, or both: medium-firm fresh cheeses, aged dry hard cheese(s), pork crackling (tepertő/töpörtyű), cabbage, black pepper, hot or sweet paprika, garlic, red onion, caraway seeds, sesame seeds, sunflower seeds or poppy seeds.

Are the Pálinka and Pogácsa Keto?

No, unfortunately neither one is keto accepted.
Although Pálinka does not contain carbs, only the fruit from which the mash is made contained fructose, but during its fermentation it is converted into alcohol and carbon dioxide. The Pálinka drink also does not contain added sugar, as do liqueurs and cocktails. On the other hand, Pálinka is alcohol, which Keto does not support in order to maintain over all health. In our opinion, rarely consumed, occasionally toasting with it does not hurt us. 

Pogácsa, the traditional scones are usually made with cereal flours, so these versions are neither keto nor paleo accepted.

However, my imagination has already started on the keto version.  I want to bake a real, keto accepted Pogácsa, so you will soon be able to read my new Keto Pogácsa recipe, and I will post it right here in Andrea’s Keto World recipe library!

Anyway, we resist to many foods every day since December 2019, such as bread, sugar, pastry, process foods, because the low-carbs diet is our choice based on the information and knowledge we’ve gained. All these useful information can be found by anyone who cares and interested about his/her health. 
 
Since we started the Keto diet, we have almost reached our desired weight. In addition, most importantly, our blood pressure has normalized and our blood test results are excellent. The results are not only “age-appropriate” but excellent! Many of our earlier symptoms have disappeared, such as hip pain for me. Today, I know that this was not only caused by the sedentary work, but by the sweet chocolate pastry eaten for breakfast every morning as well.
 
My husband and I have been discussing since the start of Keto that we will not “force” our lifestyle on any of our friends. We eat what we get and then we tolerate or treat the side effects. We believe that sometimes we have to  “drop the reins”, but we always need to be aware of the consequences.
But go back to the party!  We’ve had great time.  For dinner we had BBQ chicken with broccoli and green salad (so far so good), stuffed fries, boiled corn, sweet cake, chips with dips, and every other goodies under the Sun. We drank, we eat, we laughed and by the end of the night we got really sick.
 
We could’ve stick to our diet but we gave in to the temptation and ate, drank everything, without thinking about it. Honestly, I was so mesmerized by a boll of chips that I couldn’t stop eating them. As I said, the evening was great, the food  was delicious and the night … was very, very long. I was dealing with the consequences all night long and even the next day.

I couldn’t sleep, sit or walk at night !!! The muscles of my leg were fully tense, my knees and hips barely moved and the pain in my joints was almost unbearable. I slept almost nothing all night because every move was terribly painful. By morning my elbows were sore too.

If people experience such an extraordinary thing in their body, they have to think about what they did wrong so, that next time nothing like it could happen.  Now, I will do the same and share it with you because it is an important experience for those on Keto

Although, I think my experiences also important for those, who don’t take a reduced carbs diet. They may constantly experience these signs over the age of 40 (muscle cramps, joint pain, etc. –  heart attack or stroke are also cramps) on their bodies, but most people do not attribute all of this to carbohydrates and / or alcohol, but to the passage of time and think of them as natural.
 
Well, before anyone condemns us for thinking we drank alcohol too much and swallowed all night without moderation, I have to stop them because that isn’t what happened. This amount of carbohydrate and alcohol is eaten and drunk by an average person on an average weekend night without any remorse.  At a party in Canada, I heard that the amount of what we ate and drank was nothing! In fact, my parents with diabetes 2, arthritis and other cardiovascular problems would eat this amount of food in the same way! Of course, my father asked me after I told them about the “side effects”: “Why did you have to eat yourself sick ?!”

 

Well, here is a calorie chart of the amount of food and drink I consume from 3 pm to 2 am, just to draw the right conclusions:

I usually don’t count exactly how many carbs I eat a day, I’m just about trying to stick to the recommended amount, but now out of curiosity I wrote it down in a chart and counted how many calories, carbs and protein ate that night?  Even though I only compiled approximate quantities, the result was shocking !!!

In addition, the scales showed 2 kg (~ 4.5 pounds) more at home !!! Of course, I know this two kg of mostly accumulated water in my body due to the effect of carbs, which will leave after a few days of fasting. But it wasn’t pleasant to look into the mirror either, because I only saw a bloated, watered and tired face, which, by the way, was mine. 

Our host said, “No one held a gun to your head to eat non-keto food.” And she’s right! I wasn’t forced to eat… but the temptation was so real

What is interesting about this whole thing is, that, this much food is a normal daily average carbs intake for a person who believes in a “normal” (everything can be eaten in moderation) diet. Thus, it’s no coincidence that the daily carbs intake of sugar is 188 pounds(!!!) in America.

We both vowed to be more careful next because keto flu, fatigue, and muscle and joints pain are not fun at all.  Despite all this, we had a fantastic evening, thanks to our hosts and great friends who gave us this unforgettable evening!
